(I also dream of a thousand different careers, sometimes a mix of the two...) That is one of my problems, I am a dreamer. I tend to fall into them more than just having a quiet mind and getting my sleep at night. I have been trying hard to stop the dreams that lead to nowhere, and instead dream about God, and how much he loves me. The dream is much simpler. I just trust God, and he will take care of the rest. It is really hard to break this habit, as I find myself constantly thinking ahead.. It really does help to stop obsessing with finding acceptance from someone else, and start realizing that you have a God that wants to have a relationship with you.
